Part 1 of Designing Great Beers is a complete book in itself, focused solely on home-brewing ingredients and techniques (including three superb chapters on hops alone). Ray Daniels proves himself the "techie" type, infusing his introductory chapters with as much brewing math as brewing lore. Yet, Daniels never hops off the deep end of beer geekdom. Instead, he complements this emphasis on data with the creative use of graphics; where one could get bogged down in the stats, there is usually a clear visual depiction to instantly summarize their meaning.
This focus on facts continues into part 2 of Daniels's guide, where it backs an admirably pragmatic take on beer styles and their importance in home-brewing. Daniels devotes a chapter to each of 14 major style categories, detailing historical origins and modern brewing techniques. He lays a contemporary groundwork by compiling and analyzing the recipes of the National Homebrew Competition's most successful beers. The assumption is that beers deemed representative of particular beer styles in modern competitions serve as ideal models for recipe creation. Among the information provided for each style is a chart showing the percentage of brewers using each type of grain and in what proportions the grains were added. Similar data are supplied for hop varieties, yeast strains, and water treatment. Good book, poor ebook

The print version of the book is excellent. Unfortunately, when preparing the ebook, the publishers apparently used optical character recognition software, and didn't proofread the final copy.
Many of the equations needed to determine the amounts needed in the recipes make no sense. This makes the strongest points of the book worthless. Until the equation errors are corrected, I would recommend saving your money for the print copy

If you want to learn how to design great beers - buy this book. If you want a list of recipes, look elsewhere.

Ray Daniels started home brewing in 1989, became a certified amateur beer judge in 1992, and won a beer writer of the year award in 1998. Daniels is the founder and director of the Cicerone Certification Program – a Sommelier program for beer servers. He is currently on the faculty of the Siebel Institute of Technology - a world class brewing school in Chicago founded in 1872. Daniels has authored over 2 dozen books. He wrote this book in 1996, published it in 1998 and copyrighted it again in 2000. The bulk of the book is over 20 years out of date. Some styles have emerged in the past 20 years such as Belgian Wits, Saisons, sours, Imperial IPAs and other big gravity beers that he does not cover. Even out of date, the book warrants 5 stars. Daniels has written this book for the advanced home brewer and small craft brewer. The book is not a compendium of beer recipes. It’s what the title says: Designing Great Beers. Daniels guides the brewer through how to create beer recipes rather than giving the brewer a list. Part One, roughly a third of the book, covers how to develop a plan for creating a great beer: 1) what are the characteristics of the beer you want to make, 2) how to figure out how much malt or malt extract you will need, 3) how much and what kind of water will you need, 4) what kind of hops, how much and when to add them, 5) what kind of yeast do you want and what temperatures do you need for it, and 6) how to finish your beer. Sure he uses math. How else would a brewer figure out how much malt, hops or yeast to use and how else would brewer know how to correct his or her water? Part 2, comprising about two thirds of the book reviews the major styles of the mid to late 1990s. Daniels provides background information on the style, reviews the basic techniques of the style and then he reviews recipe examples for commercial beers and home brew recipes from the National Homebrew Competition for 1993 and 1994. Anyone mastering the techniques described in the first part of the book and observing how Daniels applies those techniques in the second half of the book should be able fill in the blanks for the news styles that have emerged in the past 20 years. If you want to improve your brewing techniques and learn how to design great beers, then buy this book. If you want a list of recipes, look elsewhere. Amazon review 12-16-14

Great Book - Needs Updating

This is great advanced brewing book with tons of useful information. It will help you on your path to advanced brewing and recipe formulation like no other. The historical information on various styles is very interesting. In 1996 when the first issue of this book was released it would be a 5 star rating but it loses 2 stars in 2014 for these reasons. It's somewhat geared towards extract brewing so if you are an all grain brewer, as I am, it will be of less immediate practical value. The technical info is there in the early chapters , you just need to initially convert for all grain base malt instead of extract. Not difficult but not ideal. Also, the book is in major need of updating. While the theory of beer formulation and design can be applied across all beer styles there is nary a mention of any Belgian ale style. When you think about the profound impact the belgian exports have had on the craft brewing world in the last 10 - 15 years it is sorely missed. This is also true for other popular styles. IPA's are treated as an almost strictly British product, much less heavily hopped than they are currently in the States where, at this point, they are almost a different style entirely.
All that said, I still think it's a worthwhile purchase but I wouldn't bother with it until you have brewed at least 100 batches and have your process and technique dialed in. In my opinion, your copies of "Brewing Classic Styles" and "How to Brew"need to be worn out and wort stained long before you buy this book.
